Typical of Montilla, in southern Córdoba. Unlike sherry, it is made mainly from Pedro Ximénez grapes and reaches its strength naturally, without adding alcohol. It yields both dry, sharp finos and the legendary sweet Pedro Ximénez: thick, ebony-dark and with intense notes of raisins, figs and dates.
