🐟 Almadraba Bluefin Tuna
Known as the Iberian ham of the sea, it is caught in spring using the almadraba, a thousand-year-old sustainable net technique that takes advantage of the tuna's passage towards the Mediterranean. Barbate is its undisputed capital, along with Zahara de los Atunes, Conil and Tarifa. It allows dozens of cuts: with onions, in lard, tataki or grilled belly.
